Hello Grace Belle Community! I’m Ashley Lane: a creative + a health-nut who is thrilled to be writing to you! I’ve been away at school studying Communications at The Master’s University in Southern California, and while I absolutely LOVE the school, teaching, and community, I have seriously missed being able to cook my own food. But, as I begun pinterest-ing recipes I could make in the dorms, I discovered Chia Seed Pudding. It’s not only beautiful, delicious, and satisfying, it’s also quick, easy, and doesn’t require any cooking! I have to admit that I ate this treat every morning for breakfast and would often make it again as a midday snack; it’s that good!
This recipe is dairy-free and naturally gluten-free and can be easily made nut-free and/or vegan by using coconut milk and honey ? SO, without further ado, here is my go-to recipe for Quick and Easy Raspberry + Chocolate Chia Seed Pudding.
Ingredients:
-2 Tbsp. chia seed
-1/3 cup coconut milk or almond milk
-1 Tbsp. (or less for low sugar!!!) maple syrup or honey.
-1 Tbsp. cocoa powder
-A handful of raspberries
-Any desired toppings {I prefer dairy-free chocolate}
4 Easy Steps:
1) Mix chia seeds, coconut milk (or almond milk), and maple syrup (or honey). Let set in fridge for at least 15 minutes.
2) Mash raspberries BUT save a few for garnish {you can add a little coconut/almond milk to the mashed raspberries to make it creamy!}
3) Transfer half of the set pudding to another bowl. Mix this with the cocoa powder.
4) Layer the chia seed pudding, chocolate chia seed pudding, and mashed raspberries as desired, add toppings, and enjoy!
One of my favorite things about this recipe is that it’s easily customizable. Don’t be afraid to play around with different flavors! I personally also love almond butter, triple chocolate, and peanut butter banana chia seed pudding! Please leave a comment below to let me know your thoughts.
