
It seems like the busier life gets, the more breakfast falls into the category of things that are “not important”. However, like our mothers and doctors have warned us many times before; breakfast = the key to starting the day in a healthy way.
Don’t fret those of you who are entrepreneurs, full-time workers, students, or just someone who hates the struggle of making a meal, I have the EASIEST recipe for you that will be sure to satisfy your morning craving AND not take too much time out of your busy lives!
Today I am going to be sharing with you the wonder that is: OVERNIGHT OATS!! *cues applause* Overnight oats are the secret you have been missing to have it all: time in the morning to not be rushed & a healthy/yummy breakfast! My recipe is a peanut butter & banana version but get creative with yours! The beauty of overnight oats is that basically, the only requirements are oats and milk, the rest is up to you! Any fruits or toppings you like can be added to this recipe.
Here is everything you will need to prep my version of this AMAZING breakfast (or snack):
- 1 cup oats
- (make sure they are regular oats and not steel-cut. I typically use Quaker but any will do just fine!)
- 1 cup milk
- (milk substitutes work just as well. I typically use vanilla almond milk because it is a healthy alternative and gives the extra flavor of vanilla)
- 1tsp vanilla extract
- 1/2 cup greek yogurt
- 1 spoon-full peanut butter
- 1 banana
- 1/3 cup granola
- 1/4 cup coconut shreds
- Drizzle of honey
Step #1: Grab a mason jar, or any container really, and add the oats. Then pour the milk right on top, stirring until all the oats are saturated. Then add the vanilla and continue to stir.
Step #2: Once the ingredients are mixed well, then add your greek yogurt (I normally use vanilla flavored) right on top, laying it gently over the oats so that it forms another layer. Then add your peanut butter, banana, granola, and coconut layering each ingredient on top of each other.
Step #3: After adding all the ingredients into the jar, top off with a drizzle of honey and you are finished! Now place the jar (covered) in the fridge and leave it there overnight, while you get your beauty rest.
Step #4: Pull out of the fridge on your way out the door and all the ingredients will have absorbed to create a decadent and flavorful meal great for on the go ladies!
Like I said before, this recipe is just a guide but get unique with the flavors you try out! For example, during fall I LOVE making pumpkin chocolate chip overnight oats with pumpkin puree and dark chocolate chips, it is sooo delicious.
